Designed as a party-sized prepared mix that is bursting full of tastes of a festive period, making it perfect for a celebration. Ingredients for the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Premix (yields 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
For the Syrup: Put the listed items into a pot, heat until it reaches a gentle boil, stirring to dissolve. Then, take off the heat and leave to cool entirely. Pour into a sterilised bottle, seal keeping it chilled, where it will keep for up to a month.
To make Cocktail Base: Pour the specified liquids in a sizeable container, let it rest for an hour, then pass it through preferably using a fine cloth, to ensure it's completely strained.
To serve: Add 85ml of the batch mix into a mixing glass containing ice, and stir gently for one minute until cold. Pour into an cold coupe glass or similar, top with a few cranberries and complete it by giving it a light spray of the essential oil above the glass.
